Every detail is taken care of by the rigorous selection of raw materials, by the passionate search for rare and genuine flavours often the result of small craft traditions. The recognized talent of the chef Valentina Galli and the present modern equipment make their experimentation, a great certainty. The contrasts play, textures and chromaticity transform a simple dinner into an extraordinary sensorial experience.

A student at the hospitality training institute, at only 17 years old she comes in contact with Syracuse where she attends an internship and is literally “bewitched” by the city, by history, by the island cuisine.

After completing her studies in the North, she decided to return into Sicily and set his roots in Syracuse, starting his career and then earning the appointment in Italian and international guides and the place in the famous Sicilian guide “Le soste di Ulisse”.
